Trimmed the dash harness tonight. Took a good 2 hours, and the engine harness will be 2-3x that.
BCM, HVAC controls, air bags, ABS, turn signals, hazards, DRLs, and trying to figure out what I need to keep or scrap.

Ha! Luckily, the General didn't change too many colors. It seems like orange is still constant, pink ignition, dk brown park ligbts, gray dimmer, black (w/ stripe), etc... There is still more to go.

I may have missed it.......but why are you using the dash wiring harness from the donor car? Are you planning on using the camaro gauge cluster?

Well, I didn't want to, but then I went gauge shopping... JFC, they hi dolla! Most of the 6 gauge packages are in the $600 range, plus they have to be electric, have sending units, work with the fuel sender, yada, yada, yada...
The Firebird gauge cluster stripped down:

Made some MAJOR PROGRESS this morning!

There were 8 wires to the TPS that were bundled with the electric fan leads that were really screwing things up. I routed those back with the injectors and the fans with the battery and starter. It made all the difference in the world!

Hopefully, I can get it mostly done by the end of the day. At least have everything isolated to what needs to go through the firewall....

This, like most ignorant car parts, was solved with heat. If it were a connector, it would have been much easier to deal with. Instead, GM stacked a bunch of wires into a little separator, snapped a bulkhead fitting around it, and flowed a bunch of goo onto the bundle.

Congrats for putting your OCD to work 'making this happen'! This a serious effort identifying and editing the unnecessary circuits. I seem to recall Built6spdMCSS had one of these clusters in his initial conversion.

Throwing in the towel for today. I still have a harness on the passenger side that I have to figure out. I need scheeematics. Pedal assembly, cruise control wires, gauges, and OBD II plug have been isolated and some huge circles of wires eliminated.

Pave the way my friend! I have all the parts to do this too, but put it on hold because of my new baby boy. I am watching to see how it all works out for you. Good luck.
