Been debating adding the vinyl woodgrain trim around the car once it's painted. Should I do it?

I think you're going to like it with the bucket and console configuration. It's going to look cool.

I'm still a little torn on the buckets/split bench thing. I think for sure I'm going to keep the column shifter, as if I do put a console in there, more room for cupholders, cubby holes, etc. Again, that's WAY down the road, probably after all the major powertrain & chassis stuff is done.

There's certainly nothing wrong with a split bench, or 60/40 seat. The downside would be that you'd be unable to install a full console.
Having bucket seats with a column shifter is not unlikely. I've seen it in various Monte Carlo SS'

Hooked up the battery, topped off the fluids and it's alive!
Runs good, no (new) leaks...
Need to order front springs and get those swapped.
