I wouldn't rely on some temp light coming on to think the car could be overheating heck the bulb could be burned out and never come on. Do what the other guys suggested and change the thermostat or just test the thermostat you have by dropping it in a pot of boiling water and seeing if it opens...

Also if anyone is converting their 78-80 cutlass from a vinyl top to a hard top those cutlasses pictured have everything you need to make the swap!!!
