I know this might sound weird but try compression test the cylinder. I had an engine years ago with a broken compression ring and it would foul out the plug about 2-3 weeks.

The reason why nobody makes a gas engine the runs like a diesel is gas burns to quickly and is not efficient. That being said please try to make one that would be cool. Smokey Yunick was a great man. 8)

Have your coolant system pressure checked ... it sounds like a bad head gasket or cracked head (thats my opinion) a pressure check of the coolant system show a loss of pressure on a guage when you let it sit for a moment... the other thing you can try is dont put the radiator cap on all the way...
first of all I dont think thats to big of a carb all depends on how you drive and set - up how ever if your having a problem with it sticking wide open then you need to address that ASAP BTW heres a CFM calculator

You can lock up your converter by jumping the top left port and top right port on your odb plug .... thats what I did with a switch in between .... (I have eliminated all the comp controll parts) so I can still lock up the convert. when I want fuel miles 8)
Runnin a dyno in 2nd gear will give u a false hp at the wheels you need to run 3 for the 1:1 ratio some companies do 2nd gear pulls (like K-N) on my silverado because to show the improvements, A 3rd gear pull will hit the speed limiter before it hits peek hp rpm so thats why they use 2nd gear...
I'm running UMI performance boxed control arms (non adjustable) and I havent put the rear sway bar back in yet cause i wanted to get the UMI 1... Im also running poly bushings and no wheel hop at all. Good bushings and and a rear swaybar will help
