I've been using a Painless Wiring #30110 thermostat switch for years it screws in my intake and I wired it as the ground for my fan relays it comes on at 195 off at 185 and I also wired in an override switch to the Painless switch.
They also have a Part# 30111 that is on at 185 and off at 170 both switches cost just under $40 each.

Me 2 works like a champ. Mine is in the T-stat housing.I am running 92 F-body fans with two relays.
If i turn on the AC it powers up the relays and overrides the 195,It works real good in the AZ heat.

I bought the Derale one to handle both of mine so far so good but I ordered another one so I can have them on separate control's so one can come on at 180 and the other on at 195.
