Hidden starter cutout switch, fuel pump relay switch if you have EFI, and an Air Tag hidden on the frame. A Ring doorbell is helpful, sometimes. If they want it, they'll take it.

I have a Lok-Itt model P300 on my truck and my ElCo, the Monte has an alarm system, a manual transmission, and a kill switch.

My truck was actually stolen a few years ago, before I put the column collar on it, they put about 50 miles on it and ditched it at a KFC. They used a rock to bash the plastic column to access the back of the ignition tumbler and start the truck and drive away. This is the easiest way to steal our cars, as they have a similar mechanism in the column. The column collar is an easy method to deter opportunistic thieves, it won't do a whole lot to stop a determined thief, but nothing will anymore.

A cheap way is to ground the tach wire with a hidden switch. For tracking you would need a GPS system

They have came out with the little GPS trackers now that you can track just about anything and they can go anywhere you want them. I would hide some inside the car

Problem is, most of the really good ones are subscription based, which costs you money every month. Almost as much as another cellphone in some cases. Not a bad thing, but the point is, it's probably just as cheap or less to feed the Doberman.

My wife's MINI has the best modern anti-theft system, a manual transmission :).

My opinion is that the best anti theft system is common sense. Park in lit areas if possible. In a garage overnight. Lock to doors. Keep everything in the car out of sight etc. Most to the car theft in my area is not that of the car but smash and grabs of its contents. People smash the window and take anything they see on the floor and seats. Most car thefts are done by steeling ones that are running to warm up in the winter or by car jacking.
