I polish pretty much everything that I have that is aluminum from rims to radiators and all the various brackets I make, one thing I do is for my finish polish is I use Meguires aluminum polish that will take the swirls out from the buffing wheels to give it a mirror finish.
Here is a couple before and after's and then some random things.

I stripped the anodized coating off these Ebay valve covers and then polished them.

Made the brackets to mount the AC on the Monte and polished all of those.

Dealing with aluminum dust in the air? You betcha. For what I am doing right now, I use the water/dish soap as both a sanding lubricant and a way to trap the material being removed in solution so it can't float off into the air. Wipe it all down with towel and throw that away.
As for the buffing wheel work, yup, mask and face shield, for this there will even be a bunny suit to keep my shop clothes from getting loaded with throw off.

Full face shield/mask is a must. I also drape off my buffing zone with dedicated old bed sheet drop cloths stapled to the rafters and use a box fan in the window to draw air through the work zone. After years of employment in loud shops and participation in motorsports that takes its toll on hearing I find using ear plugs an added layer of protection.
