I've seen some cars with, some without, should there be one in the line from the source to the booster?

there should be a check valve at the booster where vacuum source enters. if you can see i posted pic on engine side of master cylinder there is faded yellowish circular valve as main source goes in

that nipple on the booster is a check valve itself?
thought that was just, y'know, an entry.

My 85 has some sort of canister in the line between the manifold and booster. I assumed it was the check valve.....

You should have a check valve in there. The reason for the check valve is so you have vacuum for the brakes if the engine stalls. Also it helps achieve a higher vacuum reading than just with the engine. An engine that pulls 17-18” of vacuum at idle will momentarily pull 20-21” on a quick rev when the throttle blades close. The check valve captures this spike and will raise vacuum over the 17-18”. I would use one.
