Do LS1 rear brakes change the width of a GN 8.5 rear?

no not really... can't verify the exact width but I did manage to fit 18x9.5 wheels with minor scrubbing which I intend to fix by rolling the rear right quarter panel..

NO. The thickness of the rotor face ( where your lugnuts come thru ) is the same thickness as the drum face.
