I need to move my header panel on my 1980 monte carlo over a little bit to even it up.

How far does it need to go? It wasn't uncommon for the fenders to be a fuz wider than the header. Get the width established and slide the nose to even the side to side gap to the hood. If this throws off the hood, you can adjust that forward or back on one side to swing the front of the hood over as needed.
