Hot light wont turn off

I have a 1978 Cutlass Supreme. It overheated. So I changed the heater control valve, the thermostat, and the temperature control sensor. While changing the thermostat, I broke a bolt and had to take off the intake manifold to get it machined. Put everything back together and its not overheating anymore but the hot light on the dash stays on every after it sat all night? Need help!

So how do you know it is in fact not still overheating ?
