Working on a dude's qjet, and the oem electric choke thermostat has two prongs on it, and a gasket behind it. Does that mean it uses two wires, hot and ground, instead of one wire and the carb as a ground? I can't find this type of thermostat anywhere online. It's a 17057204 off a '77 Corvette, going back on that corvette when I'm done.

That part looks as if it should have the gasket behind it. There is no metal contact which would ground to the choke housing. Not having the gasket could cause a vacuum leak if it was a retrofit from the hot air type.
I would use a gasket!
