I got two BOP Th350 transmissions that are toast and really only good for cores now or scrap and a Th200c. Would my local shops buy them off me for cash or should I just scrap them? And if I scrap them should I gut the gears? I've heard that they give less if they are full of fluid and steel gears.

Definitely sell the TH350's for cores. Or save them to rebuild in the future. They're getting harder to find. The 200, in my opinion, scrap it. Someone out there may want it but I couldn't imagine why unless they were trying to do an all original restoration.
I know the last time I scrapped transmissions they paid a set price per unit regardless of condition or contents. It was $7 per but that's been a few years ago.

TH350 cores are getting much harder to come by. Usually a master kit will restore a burnt up one.

Definitely, keep or trade in your trans shop, might save a few bucks if you are getting one built. The multicase TH350 is rare and should be worth more in my books. Prices depend on how easy they are to find in your area. Around here $100 give or take.
