I have a 79 el camino with a 383 stroker in it. Not sure where it was built but bought it that way. My problem is the power steering pump was leaking so I bought a new one for a 79. The pump works at high rpm but when I go to make a turn you need both hands to turn the wheel. It has a serpentine belt set up on it and I can not figure out why this is happening. Any help would be greatly appreciated

Did you transfer the pressure valve from the old to the new pump? I've had several instances where the new pump had the wrong valve in it. The fix is to reuse the original pressure valve. It unscrews from where the high pressure line attaches to the pump (1" hex).
