I have an 84 Cutlass, what would be involved in swapping a 7.5 rear for an 8.5 rear?

Other than the actual swapping of the rear ends themselves, all you'll need to do is to have your driveshaft shortened.
If you have a 200-4R, then just see if you can get the driveshaft from the 8.5 car.
