Your easiest swap would be a 350 Olds. It's a bolt-in replacement for the 307, all the mounts and brackets bolt up, and they are readily available. The 307 headers bolt to the 350 Olds as well.

Either the Chevy or the Pontiac will require you to change all the motor and frame mounts, all the accessory brackets, starter, wiring, etc. This is not impossible, but it does require you to source a lot more little parts. The nickel and dime parts can add up. If your trans is a 200-4R, it is almost certainly a unisex bellhousing and will bolt to any BOP or Chevy motor.

I agree that the Olds 350 is the easiest way to go. If I had to choose between Pontiac and Chevy though, I would go for the Chevy for the simple fact that parts are easiest to come by . Yes, you will have to change almost everything. The frame mounts bolt in from inside the spring pocket and are hard to get at without pulling the spring. For a Chevy, you will need virtually everything off of a 305 or 267 powered G body including the mounts and front engine accessories. You can also use some parts off of B and F body cars as much of it interchanges.
