The body mount caged nut (the one under your left foot) on my 79 el camino is stripped. However, I can reach a regular nut onto the bolt. (on top of the stripped one) I hate to half *ss any thing on this resto mod, but the alternative is cutting the mount box apart to replace it. your thoughts?

Knock the bad cage nut out of there with a hammer and a chisel, and then just use a new nut to put it back together.

You might want to weld the new nut in while you're there. Then use anti-sieze on the threads. I'm sure you never expect to touch it again but you never know.
