I will in the near future be making a custom gauge set up.....I am torn between the mechanical and electric speedo , price being one factor as the electric ones are about $100.00 more......What are the pros and cons with each. I also have a 700r4 transmission with 4.10 gears so I know thw stock speedo is off as it is......Thanks in advance.

Electric speedometers set themselves I believe

My vote would be for electric. The mechanicals still require swapping of the drive/driven gears to calibrate it, and some of them require a specific style cable or at the least an adapter to attach the stock cable. The electric ones usually have a push button for calibrating, and in some(but not all) cases have their own sending units come with them.
It's usually easier to route wires than cables too. Also the VDO speedo that I have has 4-5 wires for the sending unit but they are inside of another sheath. That sheath has laid directly on my header collector and it did not burn.

I think the electric one would solve all your speedo issues. Mine runs on pulses per mile ,You push the set button drive a measured mile then push set again. No worries about speedo drive gears,or axle ratios.
