I am currently planning a LS3 build. I have most of the parts picked out. I now need to pick a cam for it. I am thinking about getting a custom cam. What are some good companies or peple to talk to about this?

Elgin makes an extremely popular cam for LS motors. It's also called the Sloppy Stage II can. If you follow sloppy mechanics on YouTube. Matt Happel is his name. He made 1098hp at the rear tire with that cam and a Chinese turbo.

Cam Motion has the highest QC I have seen to date.
Texas Speed and Summit have both recently stepped up their camshaft tech and machinery. Summit has some nice new shelf grinds for under $300.

What Mike said. I ordered a custom spec grind from Tick Performance for my 5.3 build, but it actually came directly from Cam Motion. No joke, that thing looks like a piece of art!!!
Email Brian Tooley. They were really good getting back to me and a great help putting a combo together. Comp tech support also has a pretty good reputation for helping customers. Elgin makes their cams in house as does cam motion. All are very reputable, Elgin happens to be budget friendly to boot.
