I have an '83 Pontiac Grand Prix with the 3.8L which will be swapped into a 350 in a year or so down the road. I recently got a new set of tires and rims, I have 235/60/15 BF Goodrich Radial TA's all around and I'm going to need some new shocks pretty soon. I'm looking to get a 1-2IN. lift in the rear and possibly a 1IN. drop in the front if possible. I currently have stock suspension and ride height. Would anyone know if I'd rub or bottom out with a 1in drop in the front? Any recommendations for shocks or even adjustable ones would be great. Thanks

I think you're thinking of springs? Shocks you may well need but the springs are what will actually raise/lower the car in the way you are thinking.
Off the top, I can think of Moog 5660 or 5658 in front for a 1/2 to 1" drop with an all iron motor and wagon coils in back to lift the back a bit. All around these springs will be stiffer and as such will help with body roll as well.
Not sure if that would be too much spring in front for a V6. If you intend to have an aluminum top end in a new motor the 5660 will sit too high, I know this from experience.
For more reading there is a bazillion threads on spring swaps if the search function is working.
