That really depends on what look you are going for, but the stock look was flat or satin. Gloss painted interiors can be too loud and reflect sunlight in your eyes while driving, which is never good.
 
SEM paint....go online and loook at the reviews...best interior paint on the market..

x2 - I'm doing mine right now, I'd post pics but they're all on a external hard drive somewhere...with SEM, best thing to do would be to paint & choose a clear coat - there's a couple of options, but i'd clear the pieces you paint to help protect them. I went with low-luster clear, I'm going for the stock look too, I'm really happy with it, came out really nice.
