My 87 regal limited has the stupid power windows which notoriously don't work, and I personally hate, 1. Because really, you are too lazy to roll up the window? 2. They are a pain in the a** to get them to work as they should. 3. I like the classic car feel of crank windows. So I'm wondering what it would take to convert power windows to crank windows? I don't think it'd be that tough. What's everyone's opinion?

Well, I'd say the best thing to do is get a hold of some crank window Cutlass/Regal doors. (They might be difficult to find.) Either put them right on your car or just swap out the internals and use the crank window door panels.
-OR- if you eventually decide to keep the power windows for the convenience of being able to roll the passenger side down while the car's in motion, I've heard that the window motors for '78-'80 models were much more powerful than the '81-'88 models. You could swap those in and your windows would move much faster. That's just something I read once on the internet. *It'd be cool if any of you '78-'80 guys out there could verify that! *

You need the complete manual regulator assembly out of a donor vehicle and then it's a matter of drilling out rivets and removing a few bolts and swapping parts.
You'll need to modify your door panels or buy panels with the hole for the crank handle.

I personally just swapped from manual windows to power using the Electric Life window kit and using window switches that still use the manual window crank handle. The motors and wiring harness with this kit are a lot stronger than the stock factory stuff and run up and down effortlessly.
