In my 1985 cutlass supreme I have these 2 wire taped off with electrical tape under the dash, one grey and one tan, anybody have an idea what these are for? Thank you.

I have the courtesy light hooked up already (unless there are 2) and the door jamb button works, turns the lights on and off. I will see if the voltage changes depending on the position of the door jamb switch

Does the car have (or used to have) a CONSOLE (and console shifter indicator bulb)? I think that might be for that bulb that lights up the PRNDL indicator on the console shift cars, or part of the console glove box light?

I would have to go out to the garage to check my service manual, but I think gray is for dimmable dash/panel lighting.
Yeah....I think that's correct, and the "console" PRNDL bulb dims with the other dash/radio, ashtray, HVAC controls, etc. backlight bulbs?

The Orange wire could be for the console glove box light which has it's own PIN switch to ground I believe.

The car currently has a console shift without the prndl indication on the dash, it also has the rally pack gauge cluster

Flemming442 is on to something here, trace those wires up a little farther to see if they join as a single peel and split cable. If so Flemming442 is correct, and the opposite speaker wire pair would be a two tone green peel and split.
