For optimum tuning, two O2 sensors would be best but it's not necessary. I only have one on mine controlling the engine.
On a carb'd engine, one O2 sensor is just fine since you really couldn't do much about tuning each bank of cylinders separately like you could with an EFI setup.

And you can't just add another O2 sensor. You have to have a gauge/controller setup to run two O2 sensors which will also really add to the price.
 
One last question, just wondering on a pre-85 small block Chevy which bank is usually the leaner side? The side I would want to put sensor?
 
i use the aem eugo wideband mounted in my pass side collector----works great
 
actually the best thing for tuning is a vacuum gauge. it's also a better indicator of what the engine is doing.
o2 sensors aren't that good, for one thing if you have a misfire they will read lean instead of rich.
but if you go this route, you really do need 2 sensors, one in each bank as you do need to make sure both sides are the same. i have seen cars with one bank running well, but the other is shot.
 
true dat---I use mine as a instant at a glance indicator to keep tabs on my mix, gotta be safe with a blower 😀
