I ran into an issue while about to remove my sbc clutch fan assembly, where the fan connects the the water pump where there would usually be one big hex nut, there isn't. its just a round connector. how do I remove it if It has a connector piece like that?

Should be 4 nuts holding the fan on.
The water pump should have 4 studs sticking out of the round hub.

unbolt the ones on the hub and then just pry it out?
Yes.
You should be able to grab the whole fan by the clutch assemble and wiggle it loose
(Put gloves on) 😉
