well the olds 350 is a sleeper upgrade for the 307 as they are visually similar. kinda like a 305 and a 350.
as for the 327, you mean the bearing caps are missing? you should be able to get a set and just have a machinist do a line hone.
If you really want to keep your car stock (I assume you mean #matching), The 350 Olds swap is the best thing. Set the original engine in the corner and drop in a 350. With the correct paint color almost NO ONE will be able to tell the difference. That's what a sleeper is. If you want to disguise an Edelbrock intake you can grind off some of the markings and paint it the engine color. I would suggest using a proper Q-jet for a 350 instead of a Holley. It will give the same or better performance and likely better MPG -- plus it looks stock. A good used 350, some gaskets and paint will probably cost 1/3 of a stock rebuild of your 307. If you ever want to put your car back to factory original you can reinstall your original 307. That probably won't happen though  .
Sleeper is rarely budget. Sleeper is power deceptively beyond stock utilizing some converter gears & host of other seemingly transparent improvements to take full advantage of said power. Plus deceptively stockish sound and appearance. Often the hardest thing to mask is the sound as camming it and freeing up the exhaust flow for power typically provides a sound that gives it away. One of the best ways to do this is to have more cubic inches to lessen the sound provided by an equivalent HP power producing cam at the same time providing more torque to lessen the need for stall & gears. In terms of sbo you are talking 350+ 380+ stroker or 403+ Things like the Holley double pumper would be out. It should be especially out on the 307 any way as in this case. It would just not run as smooth and consume a lot more fuel without providing any extra power. If you have heard the follow the cork analogy the carberator unless sick is not your cork.
