I have an 84' Monte Carlo that currently has a 305 bored .30 over. Previous owner removed ECM so engine is carburetor with vacuum control. Wires for ECM were snipped so replacing it is not an option I want to deal with. I am planning on replacing the 305 with a 350. What transmission could I run with the 350 that would not need ECM control. Planning on rebuilding everything I buy and hopefully push 325-375 hp range.
 
325-275 should be easy. If you decide to buy a new rotating assembly, 383 kits are pretty cheap these days.

A short tail TH350 or metric TH200 or TH2004R overdrive transmissions all fit. I think the TH2004R may require an crossmemver frame extension in your car as I believe it came with a TH350C.

In fact the transmission you have now should work fine behind a 350 especially if you're not making big power even without ECM control. What is currently in it?

Not sure what transmission is in it. Just bought the car 3 months back but haven't really dissected it yet. The previous owner did tell me the trans was rebuilt and had a stage 2 shift kit installed. So without the ECM the overdrive doesn't engage. I would like a car I can cruise with but still have fun.

If the photo in your site signature is any indication, you have an '84 Monte SS, is that correct? If so, and it still has the original transmission in it, then it should be a hydramatic 350C. Its a 3 speed auto, without an overdrive gear, but with a lockup torque converter. Probably, what you're feeling without the ECM being hooked up, is the lockup converter not engaging.
You may not need the frame extension if you go with an overdrive transmission, as I believe that GM made a provision on the G body frames, starting in 1984.
If you're looking for an automatic transmission with overdrive, then a 200R4 or an early 700R4 should fit the bill.
 
If it is a 350C you can wire up a toggle switch to activate the lockup convertor or they sell kits that will do it automatically.
The best bet would be install an overdrive trans at some point if it is going to mainly be a cruiser.
