Yes I will cover the foam in fiberglass and encapsulate it. It is the process that is used in some homemade boats and campers so I am guessing it will work.

Those Gixxer carts are in the same vein as a cross kart so they are definitely an inspiration. It will probably come down to what I find for sale in my area.

Cool project. I'm sure you've heard of the "Dwarf Car Museum". If you haven't, Google it. It's in AZ and right up your alley. It might give you some ideas.
