I 've wired in a different factory setup in the formerly diesel 83 el camino and later hacked off the connector & put in autometer pro comps. Not sure where my old notes are right now & seems like there were some variables in location between different years of gauge & idiot light setups..
But, no matter. It can be confusing just reading some of these diagrams & pin outs, but your main wire colors are consistant as to what they are.
Orange mainly always 12v constant, white tach, etc, etc as in all 3 model charts in your link just going by memory. Just make your own chart , wire color by wire color.
I assume you do know LS sends a 4 cyl tach signal, so tach would need adapter.

I don’t have a white wire on my plug for some reason. I guess I’m going to leave that harness alone since I can’t find the correct pinout then I will

I’m sorry can you translate what 4cyl would mean for me lol I’m still learning the ins & outs. I think since I can’t find the correct pinout I am leaving it alone for now. I feel like some auto meters would be better anyway I will figure those out down the way but I redid my lsx harness to we’re it will give out signal to my stock gauges.

I have all my factory rally gages working in my GP with my LS swap (minus the speedometer since I have a GP nobody has worked out how to put a electric speedometer in the stock gage cluster yet) monte's and malibus can use a 90ish suburban/G20 van speedometer that bolts in.

I use all the factory plugs on my 01ish harness minus the coolant temp, where i just used a different plug

Coolant temp- 3 wire 98 only firebird/camaro sender and plug, have to add a a 3rd wire since the ECM still sees 5V in and signal out, the 3rd wire goes to the gage in the car, newer LS stuff feed the signal digitally through the BCM

Tach- dont need an adaptor, just find the wire off the harness and connect it to the G body gage, hptuners is needed to reprogram the "out" signal to get the right pulses

Oil Press- use a 99-03 stock pickup sendor, it's 1 wire. I just found the wire in the harness where it comes out (one of the plugs you end up cutting off) if you use LT1 swap, and connect it to the G body gage.

All the wires come out of the bulkhead under the master cylinder. The plug you have is the one that goes to the gage cluster which you shouldn't need to touch if you have the engine compartment side harness.

What you need is the engine compartment bulkhead wiring diagram. You connect that with the LS harness under the hood.

I have the 3 wire temp sensor with the extra wire for stock gauge, oil press with one wire basically engine is ready just the stock harness is what needs to be tied in & it’s ready to go.

Where is bulkhead harness you mentioned? I will look for the diagram for that when I find it thanks !

I went with the autometer ultralites in 2002 with my swap mainly for the peace of mind particularly for the tach running a 6 speed. A little money upfront, but worth it, Didn't know tuning was an option now for tach pulse correction. but for the autometer tach, set the 4/6/8 cylinder switch on the back to 4. If I remember right I didn't have a factory white wire.
I did have a water in diesel wire though.
