On-the-fly EFI Programming, while driving!

I have something I would like to do for my GP. Being the tech head I am, I won't have a problem working with an EFI system but I want to do something some what advanced.

My GP will be designed mostly for street applications but in some situations I may want to increase the power of the car for what ever reason I feel like. I'd like to do this on the fly. Now part of my build will be the inclusion of an in car PC which will mostly be there for media and fun stuff purposes and I might even try finding software and compatible parts that will allow me to monitor the engine's vitals including the fuel system, air/fuel mixture, temp, etc.

I'm wondering how I could use said PC to control my Fuel and Air mixtures on the fly and what EFI systems might support this. Now I know a lot allow on-the-fly programming that and are laptop based so all I would need to do is make sure I have the compatible software for the computer installed on it with the USB cable plugged into the computer.

My concern is that these on-the-fly systems are mainly for tuning. Has someone also developed software that can also be used to make adjustments while on the road, either driving or even just sitting at a redlight? (Or is this how this crap works and I just didn't realize it?)
 
What kind of engine and fuel setup do you want to run?

In the LSx world, a company developed a GM PCM, with two different circuit boards on it with a toggle switch to switch from one tune to another. Perfect if you want to run race gas at the track but pump gas on the street. Or switching over to Meth etc.

You can always use FAST, Holley, Edelbrock etc. Pretty much any company who's ever made an intake manifold for a SBC has a system like this now.

Yes it will be an SBC, 305 to be exact. (Save the arguments for a 350 for another thread, ha!) I've looked at Edelbrock but again my concern is being able to make those changes while driving or sitting at a redlight.

This is a good system, called the EBL. Go to thirdgen.org and look around there at the guys who are running it.
