It's a Holley 750...
 
Actually, the Quadrajet is shorter than a lot of other carburetors. Most of the Edelbrock carbs require a spacer ring too, which can cause interference. As for me, I run a standard Performer intake, a 1979 Chevy van Quadrajet and the dual snorkel air cleaner base from a 1984 HO L69 305 Z-28 with the lid from a LG4 305 Monte Carlo. I have found it gives me excellent clearance, with room to grow when I eventually go to a Performer RPM. Why no chrome? Well, the car is a long distance cruiser and has factory A/C and cruise control-both of which are ugly. I figure with all that stuff there is no reason to make it pretty, just make it functional and keep it clean. After all, fast doesn't have to be pretty...

Anyhow, one of the issues with most 14 in chrome air cleaners on a SBC is that they hit the HEI distributor. I had that issue when I ran an Edelbrock carb with a 14 in Erson drop base air cleaner on the Cutlass. I had to run a spacer, but even then I had issues, and hood clearance was non existant. Since you are running a Holley, I would suggest the offset base air cleaner assembly from Moroso which is designed specifically to deal with these issues.

I am in this same dilemma right now and want to run an air gap on my 383 stroker, but I am gun shy about getting the engine built only to be unable to fit it under the hood of my cutlass. But it appears some of you are doing it. For those of you that did, are you running poly body bushings? That will raise the body slightly and give you better clearance as well. I did that, so I am starting to thing I should be able to clear the air gap with the right air cleaner, no?

I ran a Air Gap with a 650 Holley DP on my SBC and it fit under my stock hood with the insulation removed. For a air cleaner I ran a dropped base and a 3 inch filter.
 
I have a wieand 8150 high-rise dual plane manifold, holley 650cfm carburetor along with the holley heat insulator base gasket, K&N 1.250" drop base, 3.063" x 14" K&N filter and a 14" K&N X-stream Airflow Lid. No problems with clearance. I did remove my hood insulation but it was because it was falling apart and I figured with the airflow lid I didn't want to restrict flow or have to clean crap off filter. I want to try and fit 4" air cleaner but I am pretty sure that would cause a clearance issue, looks like I have about 3/4" from air cleaner stud to hood.

Body Bushings are stock still...
I used engine mounts from monte carlo with 305cid, I did originally have f-body mounts(at least thats what I think they were) and motor did sit higher, luckily my uncle has 78 malibu with 305cid so I was able to compare mounts
