Hi all I have an 83Pontiac grand prix lj with a 3.8 v6. The head gasket went and im in the process of repairing it. Im down to the point where I need to unbolt the manifolds and I should be able to pull the heads. It looks to be a real pain to get all the manifold bolts off and figure ill need to pull the motor out to make it easier. Any hints or helpful advice to make this job go quicker or smoother? Any help is greatly appreciated. Thanks, Devin.

Patience, take your time - you will need to take all the accessories off the front cause they are connected to the heads through brackets. Use WD on the exhaust manifold bolts and I hope you don't break any. You can probably get away pulling the manifolds with the heads - disconnect the exhaust of course. How did you determine the head gasket is bad??

Overheat issues led to new water pump and thermostat when that didnt help my dad determinedit to be a head gasket. He parked it and I want to get it back on the road and when I changed the oil before. Firing it up again it was like chocolate milk...

v8 swap?

If the oil was chocolate milk then the bearings are most likely already damaged, it's the ethylene glycol that causes the reaction with the embedalbe layer alloy separating it from the copper

Didn't quite fully comprehend that... how do I check the bearings? And are they easy or hard to replace?

Also I thought that chocolate milk colored oil meant that the coolant mixed into the oil and generally meant blown head gasket or cracked head/block at worst.

You'd have to remove the oil pan to inspect the bearings. You'd want to remove the engine to inspect them and once your are that far into it you might as well rebuild the engine which can get expensive. It may be cost effective to get another engine that is in good shape. If for whatever reason you just want to replace the head gasket then flush the engine with oil a few times before you fire it up.
