ramps are fine, the suspension just has to be at the ride height. Once you have the car up on the ramps push down on the car a few times to make sure the suspension is in it's neutral position
 
yes...that is if you removed the control arms which isn't necessary to change the rear springs so you probably didn't remove or loosen them.
 
it wouldn't be a bad idea to take the weight off the wheels and if you can slide the bolts out for the control arms butter them up with anti seize. There are a few threads where those bolts are a b*tch to remove.
