I saw a monte carlo out in the yard with a set of spring compressors on the rear. Has anyone ever used these to lower their rear end of the car instead of buying lowering springs or cutting coils?

yes i did
but i reverse the patern to extension my spring not to compress it, cause my monte was too low at the rear!! works good for me but i don't know about compress it...sounds like your rear spring will be stiffer.

The only time I use spring compressors is to remove or install springs....it's easy and cheap enough to have the right spring rate and length so the is no real need to use something that can end up breaking the spring...

....or cut into any part they may touch while traveling up and down.

I had to do extensive repair a Fbody subframe for that very reason on a customers car.

I used a set years ago on a 91 Geo Prizm... Didn't lower it that much though. Worked great until one day while driving, one of the compressors on the passenger side let go.
