ok. First thing's first, the 3.8 NA Buick V6 is a wonderful little A-B engine. Great for cruising and can be built decently well if you're not afraid to spend a little extra dough. For that carb, yeah. 500cfm with stock heads is pushing it but it will work. If can find a Buick 4.1 V6, its the exact same engine, just with a bigger bore if memory serves. They were found in these cars from GM:

You can get a 4 barrel carb and intake off of these that will drop right in, with NO modification whatsoever.
For this engine, all the normal stuff will work. Head porting/new heads (I believe the GN Turbo heads are the same but flow better), switching from dished to shallow dish/flattop pistons (depending on application), regular ignition upgrades (plugs, wires, coil for the HEI dist.), and exhaust. If you get a decent cam and exhaust, you can get it to idle like a V8.

Or, you can go turbo with a drawthrough system. Won't be able to run much higher than 6 or 7 PSI safely with a stock engine, but it'd be pretty unique. '79 Monte with a drawtrhough Buick V6.
These Buick engines hate hate HATE being run low on oil or with low oil pressure. Don't even chance it, ask me how I know.

Lastly, I don't know the setup for the instrument panel on late 70s montes, get yourself a good set of gauges too. Oil pressure, temp, and volts for starters.
