Back history. I've been having this problem for some time I originally thought it was the ignition so I installed push button start system. By pass the ignition completely.
Purchased new alternator and yellow top battery.

All was well for a while till one day after a 20-25 min drive
I park my car, return to start it 10 min later and nothing but the dreaded clicking sound g body's make when the battery is dead /dying

Now once I get a jump she will crank right back up with no problem.

When I park overnight or long periods of time I remove the red battery cable. When I return she fires right up.

Only after a drive she wont crank.
Any ideas why. Or anyoneb ever have similar problems?

Yes I do have headers

Sounds like a heat soak issue with your starter solenoid.
Try shrouding or protecting it with a heat shield or some sort of heat resistant material. Chevy engines are famous for that issue. If that helps but doesn't fully solve the problem, you may have to relocate the solenoid to the fender or somewhere away from excessive heat. Search Summit Racing or Jegs. There's manufacturers that make solenoid relocation kits.
