Keep your manifolds and go true dual. Sure the manifolds don't flow like headers but you will have good torque with a good set of dual pipes, AND an H-pipe. I suggest Flowmaster Super 40s as well. 2.5 " pipes all the way back.
My first GP had a 350 with the above setup. It sounded sweeter than the 5.0 mustangs did. Very deep, and good torque. Flow improved a lot after replacing the existing exhaust with the H-pipe and Flowmasters.

Here's a true exhaust story from a guy on the Olds forums;
He bought an 87 442 back when the car was only about 3 years old. Took it to the track bone stock and ran a paultry 16.8 I think it was. He did some simple tweeks and then ran a whopping 16.7. He wasn't happy.
He then ditched the crossover pipe and ran a 2 1/4" pipe from the drivers side manifold to the stock intermediate pipe. He now had a crappy looking cheap true dual set-up. Said it didn't feel any faster. Went to the track and ran a 15.8. :shock:
