Great start for a project...

I'm sellin' off my '94 Chevy 1500 in hopes of finding an Elco.... And then comes the swap to a 425 and switch pitch 400.... Should be easier than the truck was... I might put in an Olds dash if it isn't to big of a deal... I think a Euro Cutlass front clip would look sweet too if everyhthing was done right...

I learned my first building skills on antique J.D. tractors..... Cars are a little tougher.

The 350 is easy to do, and cheap.... But there are few other easy routes too.... If I wanted somethin' easy and simple I'd either go with a 350 Olds, or a 4.3L V6 Chevy with all the trick hop up goodies....that'd be cool as hell.
