G-body cars have come with quite a variety of ratios. I think some earlier S10's might have used 3.08 gears. Not sure which years used 7.5's or 8.5's. It would be nice to find a rear end with posi and the ratio that you're looking for and have the posi unit and gears swapped over to your rear. Of course, the easiest would be swapping the entire rear axle assembly.
 
If you are sticking with the th350 I would do the 3.08s & posi as listed above much better acceleration than the 2.29 and still good all around gear.

If you are going to upgrade to the 200-4R then do that first and later get some 3.73s or 3.90s for killer acceleration plus cooler transmission / cooling system temps and low to moderate cruising rpms with even better mileage. Best of both. Plus then you can get a high stall lock up converter that shoots you off the line but still locks up for low rpm highway.
