Welcome to the site. As far as seats u can either find some online or junkyard or go aftermarket. jegs has some really nice bucket seats for sale. You could also go find some out of a more modern car. Would have to probably mod the seat tracks tho. If you go for original seats I know u can buy seat upholstery from Dixie or gbodyparts or year one.

Not sure where you're from, but I live in indiana & I have some buckets that you could recover that I pulled from a '78 Cutlass. They are high backs, which is what the 78-81 montes would've came with originally. They even recline. If you live within the lower 48, I could ship them, but it'll cost a bit.
