What exactly are you looking for in terms of power output? A stock w-31 350 with #5 heads the large 1.995 intake/1.624 exhaust valves, 10+ compression, hotter cam, q-jet, and manifolds with duals was only rated for 325 horse.

I don't know. You really should call an Olds engine builder like Rocket Racing and just ask them. They'll give you all the real info you'll need. If you ask engine building questions on a forum, you'll just end up with too many people telling you too many different things.
Would it have the same conmpression as the earlier heads also??
Using 8 heads in place of 5-7 heads will always result in a lower CR, but depending on your build, 5-7 heads may actually give you too MUCH CR. That's why the 8 heads can be usefull when building a more mild, lower CR engine. 8 heads are exactly like the older 5-7 heads except they have larger combustion chambers and extra material behind the exhaust valves ( that need to be hogged out to flow as good as the older heads ). I think the 8 heads even have bigger exhaust valves than the 5-7's
Just call Rocket Racing ( or other Olds specific builder but NOT Mondello ) and they'll tell you what you need to know. If you find you would be better off with 5-7 heads, they'll probably have a few sets laying around to sell you. That's where I got mine from.
The #1 thing you need to do though is figure out what your budget is and what kind of power you're looking to achieve. You need to know if this is going to be a true rebuild or a re-ring re-gasket job. That matters.
