The stock floor shifters in these cars are garbage... Far too easy to over shift.
If you want to pound thru the gears get yourself a nice aftermarket shifter like a B&M, Hurst, etc...
I've just about got it down to a science again. (I already did 2 years ago when I was driving it all the time but I'm a bit rusty now.) I know what you mean though. There's really nothing stopping it from going up more than 1 gear at a time. The 1-2 shift is the hardest to pull off because you're rarely in 1st gear to begin with. It does take some time to get the hang of, but I personally prefer the stock shifter over lets say a Hurst "Quarter Stick." I haven't tried any B&M units.. I just don't like messing with the reverse lock-out.
