That seems to be a very common mistake on people building street cars, putting on too much head. I have a very stout 383 and a nice Hyd roller cam close to .600" lift and only run a profiler 195cc. Govs and gobs of torque and power to 7k all day. Unless is an all out race car and you you are going to live in the upper rpm stay away from big heads. Do some studying on port velocity and you'll see what we mean. Street cars are all about compromise. Hp doesn't get the car moving torque does, smaller runner = more torque= more fun on the street with increased drivability.
Oh yeah one key thing to remember, we have all been in your shoes and have all had somewhat overly high ambitions at that time as well. Many of us made mistakes and built some dogs. It's all about learjing. The key here is to learn from what we already know and save yourself the agony.
BTW I and u am sure many others here are included in this statement are very happy to see someone your age with the ambition and drive to get into this stuff. So take your time, do your research, and do things right. Like ive said in other posts it seems there's never enough money to do it right the first time but there's always enough to do it twice. Think about it
