That's how they come, or at least mine did that way.

Correct that’s how they came.... not all of them are blue and I doubt the coating is very durable. I believe they used different colors to help provide customer with detailed instructions for installation

Possibly... I ran the stainless lines on my El Camino and the fittings were also coated in different colors

We were able to get all of the UMI front suspension and the Wilwood front brakes installed today. Unfortunately we didn't have the UMI engine mounts to install so we will be ordering those this week.

From what I've seen, the fittings are color coded according to size. IT may just use all blue, though.
