220 is a bit on the high side. Is this a brand new engine? A new engine would tend to run a bit on the hot side until it starts to loosen up.

As far as coolant, you should be okay with a 50/50 mix. You could add water wetter if you want to.

A factory clutch fan should work efficiently, providing that the fan clutch is still in good shape. This setup has been used for decades with little to no problems. You could go with an electric fan setup. That's your choice.

What condition is your radiator in?

also depending on where you've plumbed your temperature sending unit
... if it's ported between #1 & 2# cylinder on the head, between the exhaust ports, that area will run very hot
... ported in the thermostat bridge on your intake, you can expect to see a difference of 20deg less than the head port

my aluminum headed sbc likes to run at 190deg on hot days. The temp gauge is plugged in the cylinder head. I can see quick temperature climbs to 220deg at the race track as the exhaust ports beside heat up.

50/50 coolant and water should be ran. Not only does it keep your block from freezing, but also prevents corrosion in the cooling system. Are you running a radiator shroud, and the air dam below the front bumper? If your not using them, the fan does not work as efficiently, and not as much air gets through the radiator with the air dam missing.
