The studs on newer S10 rotors are metric. Your studs on your rotors are standard SEA. The bolt pattern for both rotors are the same and the wheels you are using will bolt onto the new rotor using metric lug nuts.
The rotors from a '79-'81 A/G body would be the ones to use on the S10 spindles so all the studs can stay with inch threads.

Your correct, but Waldo is out of Chile and they don't have a supply of g-body parts. From what Waldo said, they have plenty of S-10s, which almost all of the front end suspension parts will interchange.

The rear rubber brake hose is longer on the S10, but it should bolt in to the gbody hard line fitting and axle fitting.
More rubber hose can make the pedal marginally softer. Unless there is some need for more clearance with the axle, it is best avoided. I do understand that parts are hard to get in Chile.

a rubber brake line that is a few inches longer will not make a brake pedal mushy, do you overthink everything?

I noted that using a longer rubber brake hose has a marginally negative effect on the hydraulic system relative to stock. I have also noted that a series of such marginally negative swaps can have a greater cumulative negative effect on the system's performance. A longer brake hose here, a smaller m/c there, calipers not designed to work with the m/c here, rust in the brake lines there, all combine to degrade the system's performance. The idea with an older car is to improve its performance. Safety should always come first. Newer cars on the road are smaller, lighter, and have front and rear anti-lock brakes. An older car is at a comparative disadvantage with the stock brake system working perfectly. Why make that worse? Even a minor fender bender is to be avoided since parts can be hard to find, especially in Chile. Maximizing the performance of the brakes just makes sense.
