1. I have a problem where the carb isn't be adjusted to have a higher idle speed when it is first starting up/when it is cold. (Choke isn't kicking in)

The carburetor is computer controlled and we just replaced it (had to problem on the old one too). I was thinking it probably is the computer, but I thought I would ask you guys if you had any ideas.

2. Also, when you push in the gas at the right amount you can hear a clicking noise and sometimes it just does it without giving it gas. Once you push the pedal down a bit more it goes away. Any ideas?

have you checked the choke linkage for freedom of movement or the choke wire for power?
the second problem sounds like a TPS sensor. is the second carb a quality rebuilt unit or just one that was sitting around?

The Carb was rebuilt to O.E.M. standards and the company seemed like a good one.

I'm not positive on the TPS Sensor, but I know when I start it up in the morning I usually have to push the pedal to the floor 2 times before it will start and in general I have to push the pedal down if it has been sitting for a few hours. I know that it seems like it's running kinda rich, but if anything that would help it a bit rather than cause it not to kick in the choke. Right now we have the idle set up a bit high so it will keep running since the choke isn't kicking in.

The sound coming from the engine almost sounds like something rattling after it gets warmed up, but right off the bat it sounds like a clicking noise.

That's exactly how you start a carbed engine, just like the owners manual states.

what kind of air filter are you running?....if you're not using the OE set up then then you'll have too much air flow and the air is too cold for proper operation of your carb until the engine warms up...
