Well, there should be four I believe...
One that goes around the crank, water pump, and alt.
One that goes around the crank, water pump, and P/S.
One that goes around the crank, water pump, and A/C.
And one that goes around the crank and air pump if it's still there...
As for the easiest way to take them off, cut them.
However to get them back on, you're still going to have to loosen up each component and fish the new belts on one at a time in the correct order.
One word of wisdom, don't pry against the p/s resevoir while you're tightening the belt unless you want to replace it after you poke a hole in it.
