That is exactly what I planned on the 76 350. I actually have used the separate shim gaskets, factory 330 part with the valley pan part cut off the Turkey tray.Regular gaskets ..but have seen someone cut the steel turkey tray gasket off at the head leaving tabs to tuck under the head to retain it while using regular gaskets if that makes sense.
Agree, Edelbrock intakes tend to be less than straight. The Turkey tray is the way to go on a cruiser. I put Permatex Ultra Black around all 4 corner water ports, both sides of the gaskets and a 3 layer tall bead, tall not wide, in place of the end seals. I also use use Permatex Aviation sealant, similar to Gaskasinch around the intake ports. Simple and easy to use if done right.Just goop the turkey tray in; it'll be fine. Everything has to be dead nuts perfect to use fiber gaskets. Be especially careful with an Edelbrock intake. I was told their intakes are "designed to be used with a factory style gasket", so that tells me they are a little careless with the intake valley angle.
Side note of something I learned during the 468 build: if you ever get the deck surface of your heads done, take an equal amount off the intake face of the head. Then, everything stays true. I had .040 taken off both sides, and it worked just fine with my ancient Torker 2.
