If I'm looking at it right, a lower (.500) ratio car can run the same spring as one with a higher (.750) ratio, and have a lower spring rate at the wheel. So a G body (at .595) needs more spring rate than a C5 Corvette (at .798 front) to have the same wheel rate?

Yes. I run 750lb springs on my RideTech system. Rides better than the cut lowering springs I had in it before... Probably should've gone to 800lb.
